π Classic Apple Pie
Ingredients (serves 8):
For the crust:
2 Β½ cups (315 g) all-purpose flour
1 teaspoon salt
1 teaspoon sugar
1 cup (225 g) cold unsalted butter, cubed
6β8 tablespoons ice water
For the filling:
6 cups (about 1.3 kg) apples, peeled, cored, and sliced (Granny Smith or Honeycrisp work best)
ΒΎ cup (150 g) sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon
ΒΌ teaspoon nutmeg
1 tablespoon lemon juice
2 tablespoons unsalted butter, cut into small cubes
Instructions:
Make the crust:
In a bowl, whisk flour, salt, and sugar.
Cut in cold butter with a pastry cutter or fork until mixture looks crumbly.
Slowly add ice water, 1 tablespoon at a time, mixing just until dough comes together.
Divide dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.
Prepare the filling:
In a large bowl, toss sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice.
Assemble the pie:
Preheat oven to 200Β°C (400Β°F).
Roll out one dough disc and place into a 9-inch pie dish.
Fill with apple mixture and dot with butter.
Roll out the second disc and place on top. Trim, seal edges, and cut slits for steam.
Bake the pie:
Bake at 200Β°C (400Β°F) for 20 minutes.
Reduce heat to 180Β°C (350Β°F) and bake for another 30β35 minutes, until crust is golden and filling is bubbling.
If crust browns too quickly, cover edges with foil.
Cool & serve:
Let pie cool for at least 2 hours before slicing so the filling sets.
