π§ Creamy Mac and Cheese
Ingredients (serves 4β6):
12 oz (340 g) elbow macaroni (or any pasta)
4 tablespoons unsalted butter
ΒΌ cup (30 g) all-purpose flour
4 cups (1 liter) whole milk, warmed
1 cup (240 ml) heavy cream
1 teaspoon salt
Β½ teaspoon black pepper
Β½ teaspoon paprika or mustard powder (optional, for extra flavor)
2 cups (200 g) sharp cheddar cheese, shredded
1 cup (100 g) mozzarella cheese, shredded
Β½ cup (50 g) Parmesan cheese, grated
Optional topping:
1 cup (100 g) breadcrumbs
2 tablespoons butter, melted
Instructions:
Cook the pasta:
Boil macaroni in salted water until al dente. Drain and set aside.
Make the cheese sauce:
In a large saucepan, melt butter over medium heat.
Whisk in flour and cook for 1 minute (this makes a roux).
Slowly whisk in warm milk and cream, stirring until smooth and thickened (5β7 minutes).
Season with salt, pepper, and paprika/mustard powder if using.
Add the cheese:
Remove from heat and stir in cheddar, mozzarella, and Parmesan until melted and creamy.
Combine:
Add cooked pasta to the cheese sauce and stir until fully coated.
Optional bake (for golden topping):
Preheat oven to 200Β°C (400Β°F).
Pour mac and cheese into a baking dish. Mix breadcrumbs with melted butter and sprinkle on top.
Bake for 15β20 minutes, until bubbly and golden.
