🍎 Classic Apple Pie

Ingredients (serves 8):

For the crust:

  • 2 Β½ cups (315 g) all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon sugar

  • 1 cup (225 g) cold unsalted butter, cubed

  • 6–8 tablespoons ice water

For the filling:

  • 6 cups (about 1.3 kg) apples, peeled, cored, and sliced (Granny Smith or Honeycrisp work best)

  • ΒΎ cup (150 g) sugar

  • 2 tablespoons all-purpose flour

  • 1 teaspoon cinnamon

  • ΒΌ teaspoon nutmeg

  • 1 tablespoon lemon juice

  • 2 tablespoons unsalted butter, cut into small cubes


Instructions:

  1. Make the crust:

    • In a bowl, whisk flour, salt, and sugar.

    • Cut in cold butter with a pastry cutter or fork until mixture looks crumbly.

    • Slowly add ice water, 1 tablespoon at a time, mixing just until dough comes together.

    • Divide dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

  2. Prepare the filling:

    • In a large bowl, toss sliced apples with sugar, flour, cinnamon, nutmeg, and lemon juice.

  3. Assemble the pie:

    • Preheat oven to 200Β°C (400Β°F).

    • Roll out one dough disc and place into a 9-inch pie dish.

    • Fill with apple mixture and dot with butter.

    • Roll out the second disc and place on top. Trim, seal edges, and cut slits for steam.

  4. Bake the pie:

    • Bake at 200Β°C (400Β°F) for 20 minutes.

    • Reduce heat to 180Β°C (350Β°F) and bake for another 30–35 minutes, until crust is golden and filling is bubbling.

    • If crust browns too quickly, cover edges with foil.

  5. Cool & serve:

    • Let pie cool for at least 2 hours before slicing so the filling sets.
