ONE-POT BLACK PEPPER CHICKEN

HOW TO MAKE THE RECIPE
Ingredients:

1-½ lb boneless, skinless chicken breasts, cut in cubes

1 red bell pepper, seeds and cut into strips

1 ½ teaspoons freshly ground black pepper

1-inch fresh ginger root, peeled. Finely chopped

2 cloves garlic, peeled. Finely minced

3 tablespoons light soy sauce, divided (optional: coconut aminos, Tamari, Bragg Liquid Amberinos, or Tamari)

3 tablespoons of white vinegar, divided

1 tablespoon honey or coconut palm sugar

2 tablespoons olive oils

DIRECTIONS
In a medium bowl, combine half the soy sauce, half the vinegar, and the sweetener. Toss the chicken in the bowl. Put the chicken in the refrigerator to marinate for at least 30 minutes.

Heat oil in a large skillet. Cook the ginger and garlic for 30 seconds until fragrant and golden.

Cook the chicken in the bowl with all the juices. Stir in the bell pepper strips, remaining vinegar and soy sauce, and black pepper. Cook the chicken for 10 minutes, or until it is tender.

Serve chicken with brown rice or quinoa, or spoon it over.

VARIATIONS:
