250 g butter (2 sticks + 2 tablespoons), cold and cut into small pieces
1½ teaspoons salt (8 g)
½ cup water + 2 tablespoons, ice cold
Instructions:
Combine Dry Ingredients: In a large mixing bowl, combine the flour and salt.
Cut in Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
Add Water: Gradually add the ice-cold water, one tablespoon at a time, mixing with a fork or your hands until the dough begins to come together. Be careful not to overwork the dough.
Form Dough: Gather the dough into a ball, divide it in half, and flatten each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes before rolling out.
