Buttery Pecan Snowball Cookies

Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • 1/2 cup (60g) powdered sugar, plus extra for rolling
  • 2 teaspoons vanilla extract
  • 2 cups (240g) all-purpose flour
  • 1 cup (120g) finely chopped pecans
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the Dough: In a large mixing bowl, cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy. Add the vanilla extract and mix well.
  3. Add Dry Ingredients: Gradually add the flour and salt to the butter mixture, mixing until just combined. Stir in the finely chopped pecans.
  4. Shape the Cookies: Using a tablespoon or small cookie scoop, roll the dough into 1-inch balls and place them onto the prepared baking sheet about 1 inch apart.
