Here’s a delicious recipe for Fruit Salad Cheesecake that’s perfect for a refreshing dessert with a creamy twist:
 
Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
16 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
1/2 cup sour cream
For the Fruit Salad:
1 cup fresh strawberries, sliced
1 cup fresh blueberries
1 cup fresh pineapple chunks
1 cup fresh kiwi, peeled and sliced
1 cup fresh grapes, halved (green or red)
1 tablespoon honey or sugar (optional, depending on fruit sweetness)
For the Topping:
1/2 cup apricot or peach jam (optional, for glazing)
Instructions:
1. Make the Crust:
Preheat your oven to 350°F (175°C).
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8-10 minutes or until the crust is lightly golden. Let it cool completely.
2. Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
In a separate bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, then add the sour cream and fold until smooth.
3. Assemble the Cheesecake:
Spread the cheesecake filling over the cooled crust, smoothing it into an even layer.
Refrigerate for at least 4 hours or overnight to allow the filling to set.
4. Prepare the Fruit Salad:
In a separate bowl, combine the fresh fruit (strawberries, blueberries, pineapple, kiwi, and grapes). If the fruit isn’t sweet enough, drizzle with honey or sugar and gently toss to coat.
5. Top the Cheesecake:
Once the cheesecake has set, carefully top it with the prepared fruit salad.
If using, warm the apricot or peach jam in a small saucepan and brush it over the fruit to give it a glossy finish.
6. Serve:
Slice and serve the cheesecake chilled.
