Do you ever have leftover rice in the fridge? A good way to use it is to make fried rice! Fried rice works best with refrigerated leftover rice. Fresh rice can be a little soft. But leftover rice that has had time to dry out a bit? Perfect for frying.
Fried rice can contain just about anything, usually a combination of vegetables, beaten eggs and a protein like the shrimp we use in this recipe, or chicken, fish or tofu.
Fish Fillets (anything you want, I used catfish)
1 lemon
1 tablespoon of capers
2 tablespoons of butter
Magic Seafood Seasoning
Season your fish generously with a seafood seasoning blend.
Bring the pan to medium-high heat, add just enough oil (EVOO) to barely coat the pan and add a few tablespoons of butter. Place the fish in the pan and cook until golden brown, about 4 to 5 minutes on one side….. Add lemon slices, a little lemon juice and a teaspoon of capers. Turn the fish over and cook for another 4 to 5 minutes on the other side, reducing the heat to medium.
We took this recipe with a tomato and arugula salad, so guess what, it makes the whole dish both friendly and tasty. Enjoy! 🙂
