Apple Caramel Cake


  • 2 medium-sized Gala apples, peeled, cored
  • ½ cup walnuts
  • ½ cup caramel candies
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 3 eggs
  • 2 tsp baking powder
  • ½ tsp vanilla
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp salt Coconut oil


Preheat oven to 350 degrees, coat a 10” cast iron skillet with a little coconut oil Thinly-slice half an apple for topping, dice remaining apple. Place 1/3 cup coconut oil and brown sugar in food processor, mix. Add eggs to butter mixture and beat. Sift flour and combine with cinnamon, cloves, salt and baking powder. Slowly add dry ingredients to food processor, continue mixing. Add vanilla, walnuts, caramel candies, mix. Pour mixture into cast iron skillet, top with apple slices and place in oven for 25 minutes.
