BEAN AND HAM HOCK SOUP

A delicious and hearty ham and bean soup perfect for winter evenings.
* Ingredients :
° 1 bag (450 g) dry white beans
° 7 cups of water
° 1 ham bone
° 2 cups cooked ham, diced
° 1/4 cup chopped onion
° 1/2 tsp. salt
° a pinch of ground black pepper
° 1 bay leaf
° 1/2 cup sliced ​​carrots
° 1/2 cup chopped celery
* Preparation steps :
Rinse the beans and place them in a large saucepan; add water and bring to a boil; boil 2 minutes then remove from heat and let soak, covered, for 1 hour.
Add the ham bone to the pot, along with the onion, salt, pepper and bay leaf; bring to bring to boil, reduce heat, open & simmer about 75 minutes, or to beans are tender. Occasionally, remove any foam that may collect on top of the soup during cooking.
Adding carrots & celery; cooking to tender.Remove bone from ham and collect rest meat: adding meat to soup also discard bone. Stirring in soup and serving .
