Ingredients:
Beef chuck roast
1 Anaheim pepper
2 poblano peppers
3 tomatoes
1 onion
2 bay leaves
1.5 cup of beef broth
2 tsp minced garlic
Salt and pepper
Directions:
Season roast with salt and pepper. Chop all vegetables. Place vegetables, broth and garlic in crockpot at bottom, mix. Place roast on top along with bay leaves. Cook for 6hrs.
Remove meat and shred. Place in pan to sauté. While meat is sautéed, remove all liquid from crockpot leaving only the veggies. Add veggies to meat and sauté for another few minutes.
All done!
I topped with crema, cheese and pico!
