Brioche light version with white cheese without butter

INGREDIENTS

500g brioche flour
250g of white cheese
1 tbsp of milk at room temperature
100g of sugar
2 eggs + 1 yolk for the gilding
2 tablespoons of orange blossom
1/2 tsp of salt
1 sachet of baker’s yeast
1/2 sachet of super active Vahiné yeast.

Preperation:

Prepare all the ingredients, and gradually pour them into the bowl of your robot.
Knead the mixture for about 10 minutes at medium speed.
Place the dough in a large salad bowl and cover with a cloth, make it “grow” for 1 hour away from drafts.
Shape your brioche, mine was very sticky, I added flour so that it does not stick to my hands and let it “grow” for another 1 hour.
Preheat your oven to 180 ° C.
Brush with your egg yolk (only 1 that you will have previously whisked with a few drops of water to de-thicken it).
Sprinkle with pearl sugar (chouquette sugar).
Bake for about 25/30 minutes.

Preparation for the thermomix:

Put your milk and the yeasts in the bowl then heat 1min / 37 ° C / Vit2, add the flour, cottage cheese, sugar, eggs, orange blossom, salt then knead for 8min.
Let your dough rise in a large salad bowl and cover with a cloth, make it “grow” for 1 hour away from drafts. To help it grow, I put my dough near a radiator, or in my oven at 40 ° C.
