Ingredients
1 egg
1 ¼ c. all-purpose flour
½ tsp baking soda
½ c. butter
½ c. white sugar
½ tsp vanilla extract
½ c. packed brown sugar
1 ⅓ c. flaked coconut
¼ tsp salt
How to make Chewy Coconut Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.
Step 2: In a medium bowl, place the flour, baking soda, and salt. Mix well until combined and set aside.
Step 3: In a large bowl, beat the butter, brown sugar, and white sugar using an electric mixer until smooth. Then, add the egg along with the vanilla, beating well until light and fluffy. Next, slowly whisk in the flour mixture. Add the coconut and stir well until blended.
Step 4: Onto the ungreased cookie sheet, drop the cookie batter by spoonfuls approximately 3 inches apart.
Step 5: Place in the preheated oven and bake for about 8 to 10 minutes or until the cookies are golden brown.
Step 6: Remove from the oven when done and let the cookies cool slightly on the baking sheet before inverting on a wire rack to cool fully.
