Chicken Pie Filling:
- Ingredients:
- 500 g cooked chicken, shredded or diced
- 1 cup frozen peas
- 1 cup diced carrots
- 1 cup diced potatoes
- 1 cup chicken broth
- ½ cup milk or cream
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- Salt and pepper to taste
- Optional: fresh herbs such as thyme or parsley
- Instructions:
- Prepare Vegetables: In a medium pot, boil the diced potatoes and carrots until just tender, about 5-7 minutes. Drain and set aside.
- Cook Aromatics: In a large skillet or saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
- Make Roux: Sprinkle the flour over the onion mixture and cook, stirring constantly, for about 2 minutes to form a roux.
- Add Liquids: Slowly whisk in the chicken broth and milk (or cream), ensuring there are no lumps. Bring the mixture to a simmer, stirring constantly, until it thickens, about 5-7 minutes.
- Add Chicken and Vegetables: Stir in the shredded chicken, cooked potatoes, carrots, and frozen peas. Season with salt, pepper, and any desired herbs. Remove from heat and let the filling cool slightly.
Assemble and Bake:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Roll Out Dough: On a lightly floured surface, roll out one disk of the chilled pie dough to fit your pie dish. Carefully transfer the dough to the pie dish and trim any excess.
- Add Filling: Pour the chicken filling into the dough-lined pie dish.
- Top with Second Crust: Roll out the second disk of dough and place it over the filling. Trim and crimp the edges to seal. Cut a few small slits in the top crust to allow steam to escape.
- Bake: Bake the pie in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
- Cool and Serve: Let the pie cool for 10-15 minutes before slicing and serving. Enjoy your homemade chicken pie!
