Easy Chicken and Rice Soup – This easy chicken and rice soup is perfect for a cold day and makes a great meal all week long.
This chicken and rice soup has been on our blog since the beginning, it’s a family favorite and the perfect weeknight meal.
* Ingredients :
° 1 tablespoon extra virgin olive oil
° 1 medium sized onion chopped
° 2 cloves minced garlic
° 2 medium carrots, chopped
° 2 ribs celery, sliced 1/2 inch thick
° 4 sprigs fresh thyme
° 1 bay leaf
° 2 liters of chicken broth or broth, we use low sodium
° 1 cup water
° 1 c un-cooked longgrain rice white
° 2 cups shredded cooked chicken, grilled chicken can be used
° Kosher salt & fresh ground blackpepper, to taste
* Methods :
Place a large saucepan over medium heat and add olive oil. Add onions, garlic, carrots, celery, thyme and bay leaf. Cook, stirring, for about 6 minutes, until vegetables are softened but not browning.
Pour the chicken broth and water and bring the liquid to a boil. Add rice and chicken. Season with salt and pepper.
Simmer over medium-low heat until rice is tender, about 25-30 minutes. Her feet are warm.
