Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. In a small bowl, mash the ripe bananas with lemon juice and set aside.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. Add the mashed banana mixture and mix until well combined.
  7. Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just incorporated, being careful not to overmix.
  8. Pour the batter into the prepared baking pan and spread it out evenly.
  9. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. While the cake is baking, prepare the cream cheese frosting. In a mixing bowl, beat together the softened cream cheese and butter until creamy and smooth. Gradually add the powdered sugar and vanilla extract, and beat until well combined.
  11. Once the cake has cooled completely, spread the cream cheese frosting over the top.
  12. Slice, serve, and enjoy your classic banana cake!
