Instructions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
- In a small bowl, mash the ripe bananas with lemon juice and set aside.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- In a large mixing bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Add the mashed banana mixture and mix until well combined.
- Gradually add the dry ingredients to the banana mixture, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just incorporated, being careful not to overmix.
- Pour the batter into the prepared baking pan and spread it out evenly.
- Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the cream cheese frosting. In a mixing bowl, beat together the softened cream cheese and butter until creamy and smooth. Gradually add the powdered sugar and vanilla extract, and beat until well combined.
- Once the cake has cooled completely, spread the cream cheese frosting over the top.
- Slice, serve, and enjoy your classic banana cake!
