Coffee custard

Ingredients for 150 g:

90 ml of coffee
5 g of ground coffee
50 g of sugar
30 g of egg yolks
10 g of corn starch

Procedure for coffee custard:

Prepare the coffee. In a bowl, beat the eggs with the sugar, add the instant coffee and corn starch, mix until the mixture is smooth.

Add the coffee, bring it to a simmer until it boils, I recommend continuing to stir. Turn off when it reaches the desired creaminess.

Place in a container covered with film, so as not to form the crust on the surface, place in the refrigerator until ready for use.
