Instructions:

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
  2. Prepare Chicken Filling:
    • Combine the shredded chicken and 1 cup of cheese in a mixing bowl.
  3. Fill and Roll the Tortillas:
    • Fill each tortilla with the chicken and cheese mixture, then roll it up. Place the filled tortillas in a greased 9×13-inch baking dish.
  4. Make White Enchilada Sauce:
    • In a skillet over medium heat, melt the butter.
    • Stir in the flour and whisk for about 1 minute.
    • Gradually add the chicken broth while whisking.
    • Cook the mixture over high heat until it thickens and starts bubbling.
    • Remove the skillet from the heat and add sour cream and diced green chiles. Be careful not to overheat, as sour cream can curdle at high temperatures.
  5. Pour Sauce and Add Cheese:
    • Pour the creamy sauce mixture evenly over the enchiladas in the baking dish.
    • Sprinkle the remaining cheese on top of the enchiladas.
  6. Bake and Broil:
    • Bake in the preheated oven for 20-23 minutes, or until the enchiladas are heated through and the cheese is melted.
    • If you’d like, broil for an additional 3 minutes to brown the cheese on top.
  7. Serve:
    • Let the enchiladas cool for a few minutes before serving. Enjoy your delicious Cream Cheese Chicken Enchiladas!
