Ingredients:
1 tbsp butter
4 cloves garlic, minced
1/2 c Parmesan cheese, shredded or grated
1 tsp garlic powder
1 tsp Italian seasoning
2 tbsp olive oil
1 lb. boneless, skinless chicken breast
2 c heavy cream (or 16 ounces)
10 oz. dry pasta (any kind)
1 tsp paprika
1 c tomatoes, diced
2 c spinach, chopped, optional
salt & pepper to taste
Directions:
Place a large pot with water on the stove and turn the heat to high. Allow the water to boil.
Add the pasta and a bit of salt, then cook for a few minutes, according to the time provided on the package. When al dente, drain and rinse with cold water to stop the cooking process.
Sprinkle salt, paprika, garlic powder, pepper, and Italian seasoning over the chicken breasts to season. Toss until well coated.
Place a heavy-duty pan on the stove and turn the heat to medium-high.
Add olive oil and allow it to become hot.
Add the chicken breasts into the hot pan, then cook for about 5 minutes on each side or until they turn brown. Transfer the chicken onto a clean plate.
In the empty pan, add butter and allow it to melt.
Add garlic into the pan with melted butter, then sauté for a minute or until aromatic.
Add the spinach and tomato, then sauté for 3 minutes or until soft.
Turn the down to low, then add Parmesan cheese and heavy cream. Stir until well blended. Season with a bit of salt and pepper to taste.
Slice the chicken into small pieces.
Add the chicken slices and cooked pasta into the pan, then toss until well coated with the delicious sauce.
Serve and enjoy!
