Ingredients for 4 people:
300 g of penne rigate
200 g of cooked pumpkin
150 g soft cheese
150 ml of cooking cream
50 ml of milk
80 g parmesan
pepper as needed
Preparation of the creamy penne with pumpkin:
Once the pumpkin is cooked (boiled or baked but not browned) and allowed to cool, blend it with the milk, mix the cooking cream inside the pumpkin, put everything in a non-stick pan over low heat and add the cheese to pieces, keep mixed
Meanwhile, boil the water and as soon as it boils, add the coarse salt and the penne. Cook for 15 minutes or the time described by the package.
Drain the pasta and pour over the pumpkin cream, mix evenly, serve hot with a sprinkling of pepper if you like!
