I’m popping in today with a new crock pot recipe, Crock Pot Tortilla Soup! Crock Pot Tortilla Soup is simple, delicious, and loaded with veggies. I’m sure you already have most of the ingredients in your pantry and fridge!

Cook Time: 4 hours
Total Time: 4 hours 15 minutes
Ingredients:
6 6-inch corn tortillas
1 onion
1 tbsp olive oil
3 cloves of garlic large
1 jalapeño diced and seeded
14 oz crushed tomatoes
2 tsp cumin
4 cups chicken broth
2 tsp chili powder
1 can Rotel
14 ½ oz black beans
1 cup frozen corn
2 chicken breasts
¼ cup cilantro
Instructions:
In a skillet, sauté the onion, garlic, and jalapeo in olive oil. Fill the bottom of a slow cooker with this mixture.
Cook on high for 4 hours with the remaining ingredients (excluding tortillas and oil) in the slow cooker.
Return the shredded chicken to the pot. Serve with tortilla strips on the side.
Crispy tortillas:
In a small pan, heat the oil over medium-high heat. Small batches of tortilla strips should be added and fried until crisp. Using paper towels, absorb excess liquid and season with salt.
