Delicious Crepes Recipe ❤😍
Ingredients:
For the Crepes:
2 cups milk
4 eggs
3 tbsp melted butter
1 tbsp sugar
1 1/2 tbsp vanilla extract
1/8 tsp salt
1 1/2 cups all-purpose flour
For the Cream Cheese Filling:
1 package (8 oz) cream cheese, softened
1 1/4 cups powdered sugar
1 tbsp lemon juice
3/4 tsp vanilla extract
1 cup heavy whipping cream
4 tbsp granulated sugar
For the Topping:
4 cups fresh strawberries, sliced
Preparation:
Prepare the Crepe Batter:
Add the milk, eggs, melted butter, sugar, vanilla extract, salt, and flour to a blender.
Blend for 15-20 seconds until the batter is smooth and fully combined.
Refrigerate the batter for at least 1 hour or overnight for best results.
Cook the Crepes:
Heat an 8-10 inch nonstick pan over medium heat and lightly coat it with cooking spray.
Pour 1/4 cup of the crepe batter into the center of the pan.
Swirl the pan to spread the batter into a thin, even circle.
Cook until the top of the crepe looks dry and it easily slides in the pan, about 1-2 minutes.
Flip the crepe and cook for an additional 20-30 seconds.
Remove from the pan and repeat with the remaining batter.
Prepare the Cream Cheese Filling:
In a mixing bowl, beat the softened cream cheese, powdered sugar, lemon juice, and vanilla extract until smooth.
In a separate bowl, whip the heavy cream and sugar together until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until well combined.
Assemble the Crepes:
Spread a generous amount of the cream cheese filling onto one side of each crepe.
Add a few slices of fresh strawberries on top of the filling.
Roll the crepe or fold it into quarters, as preferred.
Serve:
Arrange the filled crepes on a plate and garnish with extra strawberries, a dusting of powdered sugar, or a drizzle of chocolate sauce if desired.
