° 2 cups frozen pineapple
° 1/4 cup milk of your choice (try canned coconut milk for a smooth pina colada!)
° 1/16 teaspoon salt
° 1 pinch of pure stevia extract, or 2 tablespoons of sugar of your choice
° 1 tablespoon lemon juice
Mix all ingredients until smooth. Scoop out an ice cream scoop or squeeze it into a pastry bag, a Greek yogurt machine, or a plastic bag with a cut edge. (If your blender is not very strong like Vitamix, you may need to add a little liquid and then freeze a little before serving, or stir it into an ice cream maker.) For a smooth serving that keeps its shape for longer, freeze beat the rolled dough before serving At least 20 minutes.
