1 Chicken breast
Pinch of oregano, cumin, garlic powder and paprika (or use your favourite seasoning)
2–3 cups organic baby arugula
1/4 cucumber, sliced
1 tbsp avocado oil
1 tsp maple syrup
1 tbsp lemon juice
pinch of salt
Season chicken with spices. Place in air fryer at 350°F for 8 minutes then flip and cook for another 8 minutes (make sure chicken is fully cooked, time can vary depending on size of chicken).
In the meantime, place arugula, cucumbers and avocado in a bowl.
Add dressing ingredients to a small sealable container and shake it up.
Once chicken is cooked, cut into smaller pieces and place on salad.
