Garbage Bread: Complete Recipe

This recipe turns leftover ingredients into a fun, flavorful party favorite. Garbage Bread is basically a giant stuffed bread roll loaded with savory goodness and baked to a golden, crispy finish.

Ingredients:

For the Filling:

  • Ground beef – 1 lb
  • Diced onion – ½ cup
  • Salt – ¼ tsp
  • Pepper – ¼ tsp
  • Ketchup – ⅓ cup
  • Mustard – 3 tbsp
  • Cooked, crumbled bacon – 6 slices
  • Chopped dill pickle spears – 2
  • American cheese slices – 8

For the Bread:

  • Refrigerated French bread dough – 1 (11-oz) tube
  • Large egg, beaten – 1
  • Sesame seeds – 1 tbsp

For Serving:

  • Thousand Island dressing

Instructions:

Step 1: Prepare the Filling

  1. Cook the beef and onion: In a large skillet over medium heat, cook ground beef and diced onion until browned and tender, about 8–10 minutes. Crumble the beef as it cooks. Season with salt and pepper.
  2. Add flavor: Drain excess fat, remove from heat, and let cool slightly. Stir in ketchup, mustard, and crumbled bacon.

Step 2: Assemble the Bread

  1. Preheat and prep: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.
  2. Roll out dough: On a lightly floured surface, roll the French bread dough into a rectangle about 12×8 inches.
  3. Layer the filling: Spread the cooled beef mixture over the dough, leaving a 1-inch border. Top with chopped dill pickles and American cheese slices.
  4. Roll and seal: Carefully roll the dough from a long side into a tight log. Pinch seams and ends to seal, then place seam-side down on the baking sheet.

Step 3: Bake the Garbage Bread

  1. Egg wash and seeds: Brush the top with the beaten egg and sprinkle sesame seeds.
  2. Bake: Bake for 25–30 minutes, until golden brown and cooked through.
