Grandma’s Lemon Meringue Pie

Ingredients :

 for 8 people

+shortcrust pastry

°150g caster sugar

°3 eggs

°40 cl of milk

°40 butter

°30g flour (3 tbsp)

°20g cornstarch (2 tbsp)

°The juice of a squeezed lemon and its zest

Directions:

1-Preheat oven  8 about 10 min. Meanwhile, separate the yolks from the whites in two respective bowls. Mix the yolks, then add half the sugar, the flour, the cornstarch, and the lemon zest, mixing between each ingredient.

2-Heat the milk and pour it boiling over the preparation, stirring well so that no lumps form. Add the butter in pieces.

3-Pre-cook dough for 10 min without let it brown.

4-When dough is ready, adding lemon juice to preparation also garnish pie dough. Always bake at mid-height for 20 minutes thermostat 6/7.

5-Meanwhile, beat the egg whites very stiff then add the other half of the sugar and beat again for 1 or 2 minutes.

To finish

Add the meringue to the pie and cook very gently (thermostat 3/4) for about 15 minutes.
