Grown-Up Beer Pancakes

Ingredients

1 1/4 cup flour
1/4 cup sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 cup pilsner or light beer
1 egg
2 tablespoons vegetable oil
1 teaspoon vanilla extract

Preparation

Combine flour, sugar, baking powder, salt, and cinnamon in a small bowl.
In a large bowl mix together beer, egg, oil, and vanilla.
Add the dry ingredients to the wet ingredients, but do not over mix. Batter will be slightly lumpy.

Using about 1/4 cup of batter for each pancake, cook the pancakes for 2-5 minutes each side on medium heat. Serve with fruit, maple syrup, or your favorite pancake fixins.
