juice of 2 lemons
1/2 cup honey
4 tbsp. gelatin powder
3 cups water or tea (2 cups at room temperature and 1 cup boiling hot)
diced fruit (optional)
In a measuring cup, mix together lemon juice and honey. Set aside.
Pour 2 cups of room temperature water or tea into 1 quart or larger measuring cup. You could alternatively use a 1 quart mason jar.
Gently sprinkle gelatin into the liquid, a little at a time.
Carefully pour in 1 cup of boiling hot water and stir to dissolve gelatin.
Add the lemon and honey, stir to mix.
Pour into bowls or containers of your choice.
Add diced fruit if preferred.
