Ingredients:
1 lb. corned beef cut into strips
1 c Swiss cheese
Scallions
2-3 tablespoons of butter
One bag of coleslaw mix
Russian Dressing:
1 teaspoon hot sauce.
1/4 c sugar-free ketchup
A pinch of pepper
4 teaspoons horseradish
1/2 tsp salt
1 teaspoon Worcestershire sauce
1 c mayonnaise
Directions:
Place a skillet on the stove and turn the heat to medium.
Add butter and allow it to melt.
Add the corned beef into the hot skillet, then stir and cook for about 5 minutes.
Add the coleslaw, then stir until mixed with the corned beef. Cover the skillet with a lid, then cook the coleslaw for about 5 minutes. Stir again until well blended.
Add the cheese over the corned beef and coleslaw.
Cover the skillet with the lid, then let the cheese melt completely. You can place the skillet in the oven to melt the cheese further.
Drizzle the dressing on top, followed by freshly chopped scallions.
Serve right away. Enjoy!

Feel free to serve this with lettuce.
You can use sauerkraut instead of cabbage.
You can use turkey instead of roast beef.
