°3 and 1/2 cups of bread flour, ground with a spoon
°1 tsp. Salt + 1/2 tsp.
°1/2 gallon of milk
°¼ cup water
°1/4 cup cubed butter
°sugar (half a cup)
°yeast, 2 tbsp.
°eggs 2
°2 oz. raisins
°Separate 2 egg yolks into 2 bowls
of red food coloring
* Directions :
Combine 2 cups of bread flour and salt in a mixing bowl or stand mixer.
Heat milk, water, and butter in a glass measuring cup in the microwave to 120°-130°C) (Heat until butter is partially melted, then whisk until melted the rest of the way.
Do not adding liquid to yeast mix until it is warm to touch. Using your finger, but not while it is still hot.) To liquid, adding sugar//and yeast.
If you are satisfied that the yeast is not dead, move to the next step. Otherwise, wait 5 minutes to see if the foam comes off.
Add the liquid to the dry ingredients and stir until wet. 2 eggs, beaten until fluffy, stirring in enough remaining flour to make a paste. The dough should form a ball, but it’s fine if it sticks a little.
Adding flour to the dough makes it easier to work with without making a big mess on your hands.
On a floured surface, turn it over. Knead for 6-8 minutes to smooth elasticity.
