Mediterranean Couscous Salad with Feta Cheese

1 10oz packet/ 2Cups – Couscous
1 pint – GrapeTomatoes
1 – English cucumber, cubed
6 oz – Feta cheese, crumbled
4 tablespoons – Extra Virgin Olive Oil
2 – Lemon
2 Cups – Fresh Parsley, chopped
12 – Mint leaves, chopped
Zest of 1 lemon
Salt to taste

Cook Couscous as per package directions.
Stir in olive oil, lemon juice, lemon zest, cherry tomatoes, cucumber, feta cheese, parsley and mint.
Season with salt and serve chilled
