– 1 PKG yellow cake mix.
– 1 can crush pineapple with juice.
– 1 cup and half confectioners’ sugar.
– 1 cup of water.
– 1/3 cup canola oil.
– 8 ounces of cream cheese.
– 8 mandarin oranges.
– 3 large eggs.
STEP 1 – Mix your yellow cake mix following the directions in the back of the box. And bake the batter in two round pans.
STEP 2 – Let the cakes cool, then split using a serrated knife each cake in half to have 4 layers.
STEP 3 – Whip cream cheese until soft, and gradually add confectioner’s sugar.
STEP 4 – Stir in the pineapple include juice and three drained mandarin oranges, then mix in the dry pudding mix.
STEP 5 – Fold in the whipped topping, and top cakes layers and sides spreading frosting on top.
STEP 6 – For the topping, I used remaining mandarin orange slices.
STEP 7 – Store in refrigerator overnight before serving.
