Ingredients
¼ c. olive oil
3 pounds boneless, skinless chicken thighs
2 teaspoons paprika
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 ½ teaspoon kosher salt or to taste
Instructions
Step 1: Prepare the oven. Preheat it to 425 degrees F.
Step 2: Using aluminium foil, line the bottom of a rimmed baking sheet and grease with non-stick cooking spray.
Step 3: Combine the paprika, garlic powder, onion powder, salt, and pepper in a small bowl and set aside.
Step 4: To a medium-sized mixing bowl, add the olive oil. After patting the chicken dry, add them to the bowl and toss until completely coated with olive oil.
Step 5: On the baking sheet, evenly lay out the thighs, bottom-side up. Over the thighs, sprinkle about 1/3 of the seasoning mix. Turn the thighs over and sprinkle with the rest of the seasoning. Rub the seasoning gently onto the thighs.
Step 6: Place the baking sheet on the bottom third rack of the preheated oven and roast the chicken thighs for about 12 to 14 minutes or until the internal temperature of the thickest part of the thighs reached 165 degrees.
Step 7: When done, take the baking sheet out of the oven and let the thighs rest for about 8 to 10 minutes.
