Pancakes stuffed with almonds

Mince :
2 lbs blanched almonds (or use ground almonds) and mix them with:
2 oz softened butter

2 egg yolks

8 oz sugar

1 tsp cinnamon

Knead well together then take knobs the size of a walnut and flatten them into paper-thick discs, 2 inches across. Stuff the pancakes with this almond mixture, fold them and fry till golden brown in a buttered frying pan. They are quite delicious, served with honey or sugar.

 

Stuffed pancakes

Prepare flaky pancakes « Er-ghaifs» (see recipe above), spread them out and place, in the middle of each, 1 tbsp of the following stuffing, cooked for 10 min over medium heat.

2 lbs onions, chopped

4 strips khlii, pieces

6 tbsp khlii fat

1 tbsp sweet pepper –

1/2 tbsp hot pepper

1/2 tbsp cumin paprika

Fold in the sides of the pancakes to make a square about 3 inches wide. Flatten them lightly by hand, baste them with khlii fat, place them on an oiled oven tray and bake them for 10 to 15 min (gas 6-7). these golden brown pancakes make an elegant first ourse to dinner. serve them piping hot with mint tea.
