- 2 cups flour
- 1 + 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup sugar
- 1/2 cup butter, softened (at room temperature)
- 2 large eggs
- 1/2 cup milk
- 1/2 cup crushed pineapple, drained
- 1/2 cup desiccated coconut
- 1 teaspoon vanilla

- Mix flour, baking powder, baking soda, salt, and coconut.

- Add crushed pineapple, then fold in dry ingredients just until combined (avoid overmixing).
- Pour batter into pan, smooth top, and bake 45β55 minutes. Toothpick should come out clean.
