INGREDIENTS
4 large Yukon Gold potatoes
1/2 white onion
1/2 cup chopped green onions
1 tbsp baking powder
1/4 cup bread crumbs
1/4 cup chopped dill
1 cup sour cream
1 tsp caviar per latka
4 servings of smoked salmon
Chopped dill for garnish
INSTRUCTIONS
Peel the potatoes and grate them on the large side of a box grater.
Grate the onion on the large side of the box greater as well and combine the potatoes and onions in a bowl.
Using a cheesecloth or a fine mesh strainer, squeeze out as much as the liquid as you can and set it aside.
Place the dry potatoes and onions in a bowl and add 1 egg, the bread crumbs, baking powder, green onions, salt and pepper.
Preheat the waffle maker for a few minutes. Add about ½ cup of the potato mixture to each slot of a waffle maker
Cook for 3-5 minutes on either side.
Combine the sour cream with 1 tablespoon of olive oil and the dill. Season with salt and pepper
Add two latkes to a plate and top with some of the smoked salmon.
Add a dollop of the sour cream mixture on top followed by some of the caviar. Garnish with fresh dill, enjoy!
