Raw Beetroot Salad Recipe
Ingredients:
- 2 medium-sized beetroots, peeled and grated
- 1 large carrot, peeled and grated
- 1 apple, cored and grated
- ¼ cup chopped fresh parsley
- ¼ cup chopped walnuts or sunflower seeds (optional)
- 1/4 cup crumbled feta cheese (optional)
Dressing:
- 3 tablespoons olive oil
- 1 tablespoon lemon juice (or apple cider vinegar)
- 1 teaspoon honey or maple syrup
- Salt and pepper to taste
Instructions:
- Prepare Vegetables and Apple:
- Peel and grate the beetroots, carrot, and apple. Place them in a large mixing bowl.
- Mix Salad:
- Add the chopped parsley to the bowl. If using, add the chopped walnuts or sunflower seeds and crumbled feta cheese.
- Prepare Dressing:
- In a small bowl, whisk together the olive oil, lemon juice (or apple cider vinegar), honey (or maple syrup), salt, and pepper.
- Combine and Serve:
- Pour the dressing over the salad and toss to combine thoroughly. Adjust seasoning to taste.
