Raw Beetroot Salad Recipe

Ingredients:

  • 2 medium-sized beetroots, peeled and grated
  • 1 large carrot, peeled and grated
  • 1 apple, cored and grated
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped walnuts or sunflower seeds (optional)
  • 1/4 cup crumbled feta cheese (optional)

Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice (or apple cider vinegar)
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Instructions:

  1. Prepare Vegetables and Apple:
    • Peel and grate the beetroots, carrot, and apple. Place them in a large mixing bowl.
  2. Mix Salad:
    • Add the chopped parsley to the bowl. If using, add the chopped walnuts or sunflower seeds and crumbled feta cheese.
  3. Prepare Dressing:
    • In a small bowl, whisk together the olive oil, lemon juice (or apple cider vinegar), honey (or maple syrup), salt, and pepper.
  4. Combine and Serve:
    • Pour the dressing over the salad and toss to combine thoroughly. Adjust seasoning to taste.
    • Let the salad sit for about 10-15 minutes before serving to allow the flavors to meld together.
