Refreshing Quinoa Salad


1 cup quinoa, uncooked
1 cup chickpeas, drained and rinsed
1 cup cucumbers, chopped
1/2 cup tomatoes, diced
1/2 cup red onion, diced
2 tbsp feta
1 tbsp fresh parsley


1/2 cup olive oil
3 tbsp white wine vinegar
1 tbsp maple syrup
1 tbsp dijon mustard
2 garlic cloves, minced
Pinch of salt and pepper


Bring quinoa and water to a boil, then reduce to a simmer and cover. Cook for about 20 minutes, until water is absorbed and quinoa is light and fluffy. Set aside and let cool.
Add vinaigrette ingredients to small jar or bowl and mix.
Add remaining ingredients to large bowl and dress with vinaigrette.
