Shrimp Salad

Ingredients:

1 pound shrimp, peeled and deveined
2 hard-cooked eggs, chopped
1/2 cup celery, thinly sliced
1/2 cup mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon onion powder
salt and pepper to taste

Directions:

1. Parboil shrimp in a small saucepan of salted boiling water until pink.

2. Strain shrimp and rinse in very cold water.

3. In a small bowl, mix the shrimp, eggs, celery, mayonnaise, mustard, onion powder, salt and pepper.

4. Chill in the refrigerator at least 1 hour.
