Imagine preparing a dish without an oven! This chicken casserole is perfect for a weekday meal since it can be made in the slow cooker hours before dinner time. This is also excellent for a stress-free evening meal, as it can be made in advance and stored in the refrigerator.

Give your loved ones a good meal and store some for later. It seems like whenever you whip up a batch of your favorite noodly, creamy dish, there are always mountains of leftovers!

Casseroles and crock pots are my sanity savers. The pace of life can be hectic, so it’s nice to take a break every once in a while to spend time with loved ones and appreciate your surroundings. That’s possible because of recipes like these. Using rotisserie chicken is another time-saving trick for this recipe. This is available for purchase in stores, or you may make a large batch of rotisserie chicken in a slow cooker and repurpose the leftovers. You may save yourself 6-7 hours of cooking time if you buy precooked chicken. Just shred the chicken and cook it according to the same directions as before, making sure to just cook it until it’s heated through.

Ingredients

1 medium yellow onion, chopped

4 boneless, skinless chicken breasts

1 can (10.5 oz.) cream of chicken soup

1 c. cooked rice

fresh chopped parsley, to garnish

2 c. cheddar cheese, shredded

1 ½ c. chicken stock

1 can (15 oz.) corn kernels, drained

How to make Slow Cooker Chicken Casserole

Step 1: Place the chicken breasts in the bowl of a slow cooker. On top, sprinkle the onion.

Step 2: Add the soup and stock to a medium bowl. Mix well, then pour this over the chicken.

Step 3: Set to cook for 8 hours on low.

Step 4: Take the chicken out of the slow cooker once ready to serve. Using two forks, shred the chicken. Return the shredded chicken to the slow cooker. Then, add the rice along with the cheese, and corn. Stir well.

Step 5: Serve right away garnished with some parsley. Enjoy!
