Chicken thighs marinated to perfection! This Spicy Honey Lime Chicken is one of the best chicken recipes I have ever tried! In less than an hour, you can enjoy grilled chicken like never before!
Ingredients:
Garnish: 2 tbsp chopped cilantro or parsley; lime wedges
2 1/2 lbs (1.13kg) boneless skinless thighs, trimmed and cut into 2 inch/5.1cm pieces
Honey Lime chicken marinade (and glaze)
4 garlic cloves, minced or grated (or 1/2 tsp garlic powder)
1 1/2 tbsp Sriracha sauce for pretty spicy (use more or less to taste)
1 1/2 tbsp grated fresh ginger (about 1 1/2-inch of fresh ginger)
1 tbsp vegetable oil
3 tbsp soy sauce with low sodium is good if you have
1 1/4 tsp kosher salt
6 tbsp honey or maple syrup
1/2 tsp cornstarch (to thicken to glaze consistency) Optional
1 tsp lime zest from one lime
3 tbsp fresh lime juice from 1 1/2 to 2 limes
Directions:
For the Marinade:
Add all the ingredients for the marinade into a mixing bowl, then whisk until well blended. You can use a food processor for this step.
Add 1/2 of the marinade inside a large resealable bag.
Add the chicken inside the bag, then seal and shake it until the chicken thighs are well coated.
Place the bag inside the fridge and marinate the chicken for at least 30 minutes or overnight.
For the Glaze:
Add 1/2 tsp of cornstarch into the bowl with the remaining marinade. Stir until well blended.
To Grill:
Prepare the grill and preheat to medium-high.
Let the skewers, soak in water for 30 minutes before you grill the chicken. (This is important to soak the skewers to prevent them from burning during the grilling time.)
Thread the chicken with the soaked skewers.
Drizzle a bit of oil over each chicken thigh.
Place the skewered chicken thighs over the preheated grill, then cook all sides for about 9 to 12 minutes or until done.
Remove from the grill and allow the chicken to rest for a few minutes.
