Spinach Ham and Cheddar Fritatta

Ingredients

1 Tbsp. olive oil
9 large eggs
1 tsp. Dijon mustard
1 tsp. baking powder
kosher salt and black pepper
1 10-ounce package frozen chopped spinach, thawed and squeezed of excess liquid
1 cup Cheddar, grated
4 slices deli ham, chopped

Preparation
Step 1

Heat oven to 400° F.

In a large bowl, whisk together the eggs, dijon mustard, baking powder, salt and pepper. Mix in the spinach, cheddar, and ham.

Add the olive oil to a large skillet swirl to coat. Add the egg mixture to the skillet, stir once, and transfer the skillet to oven. Cook until the eggs are set, 12 to 14 minutes.
