Albondigas for dinner

Ingredients:

🌿1 pound 90/10 lean ground meat 🥩
🌿1/2 cup white long grain rice (raw/uncooked) 🍚
🌿1/3 cup chopped hierbabuena (spearmint/mint)
🌿black pepper
🌿garlic powder 🧄
🌿salt 🧂
🌿 2 eggs 🥚
🌿1/3 cup finely chopped onions 🧅
🌿4 Roma tomatoes 🍅
🌿1/2 🧅 cut in chunks
🌿1 cube chicken bouillon
🌿1 cube knorr tomato cube
🌿3 chile chipotle peppers in adobo sauce
🌿5 garlic cloves
🌿2-3 tablespoons olive oil
🌿2-3 cups beef broth (preferably homemade)
🌿3-4 potatoes 🥔 (depending on size)
🌿3 zucchini’s
🌿4 carrots 🥕
🌿5 celery sticks
🌿limes
🌿serrano peppers
🌿tortillas

Directions:

👉🏼In a bowl, mix your 1 pound lean ground meat with 1/2 cup of rice, 1/3 cup mint, 1/3 cup onions, black pepper, garlic powder, salt and 2 eggs.
👉🏼once your ground meat is all mixed very well your going to start forming your meatballs. I like making them as big as a golf ball but you could make them bigger or smaller. It’s up to you.

I was able to make 20 meatballs out of 1 pound of ground meat.

👉🏼In your blender your going to blend your 4 Roma tomatoes, 1/2 onion, 1 cube of chicken bouillon, 1 cube of knorr tomato, 3 chipotle’s, 5 garlic cloves, 2 cups water to help blend.
Blend well.
👉🏼add 2-3 tablespoons of olive oil into your pot and once oil is hot, pour in your sauce you just blended.
👉🏼your also going to add in 3 cups of beef broth (homemade preferably)
👉🏼once sauce comes to a boil add all your meatballs. Cover pot and Allow to cook on medium heat for 20-25 minutes.
👉🏼after 20-25 minutes add all your vegetables. Add salt if needed. Allow it to cook for another 20-25 minutes or until your potatoes and carrots are done.
👉🏼Top with:
•lime juice
•serrano peppers and done!!
