APRICOT GLAZED BACON WRAPPED CAJUN PORK TENDERLOIN

INGREDIENTS

  • 6 strips bacon
  • 1 1/2 pounds pork tenderloin
  • 2 tablespoons brown sugar
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon grainy Dijon mustard
  • 3 tablespoons apricot preserves

INSTRUCTIONS

Step 1: Mix the Cajun seasoning with brown sugar until well combined, then rub this onto the entire pork tenderloin.

Step 2: Wrap the pork tenderloin in bacon.

Step 3: Into a hot oven-safe skillet, add the bacon-wrapped tenderloin and cook over medium heat for about 10 to 15 minutes or until all sides of the bacon-wrapped tenderloin have browned.

Step 4: Meanwhile, prepare the oven. Preheat it to 400 degrees F or 200 degrees C.

Step 5: Once the bacon-wrapped tenderloin turned browned, shift the pan into the preheated oven. Bake the bacon-wrapped tenderloin for about 10 to 15 minutes or until done, and the internal temperature of the meat reached 140 degrees F.

Step 6: Brush the pork with the apricot preserves and mustard mixture in the last minutes of baking. Remove from the oven when done and allow the pork to rest for at least 5 minutes, covered, before serving. Enjoy!
