1 pound round steak fillets diced
2 large tomatos (one diced and the other pureed)
1 small onion diced
1 garlic clove finely diced
1 green pepper thinly sliced
1 serrano pepper finely diced
1 large potato in thin slices then cut in 4 parts
Salt and pepper
In a large skillet fry potatoes until almost done and reserve.
Sautee all the vegetables (tomato, onion, garlic, peppers)
Add the beef to the sauteed vegetables, when almost done add the potatoes and pureed tomato.
Add cilantro, salt and pepper to taste.
Add 1/2 cup of water so it won’t get too dry.
Simmer for 5 -10 minutes aprox. until done
Enjoy with corn or flour tortillas, serve with beans and queso fresco or rice.
