☕🍰 Caramel Coffee Cake

Soft, buttery, and rich with coffee and caramel flavor — this cake is a true indulgence for every coffee lover. Perfectly moist layers, silky buttercream, and a dreamy caramel drip topping ✨

🧁 Ingredients

For the Cake:

  • 2 + 1/2 cups (310 g) flour
  • 1 tablespoon granulated coffee
  • 1 tablespoon hot water (to dissolve the coffee)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (230 g) butter (at room temperature)
  • 1 + 1/2 cups (300 g) sugar
  • 4 large eggs (room temperature)
  • 1 teaspoon vanilla
  • 3/4 cup (180 ml) milk

For the Caramel Sauce:

  • 1 cup (200 g) granulated sugar
  • 6 tablespoons (85 g) butter (cubed)
  • 1/2 cup (120 ml) heavy cream
  • A pinch of salt

For the Coffee Caramel Buttercream:

  • 1 cup (230 g) butter (at room temperature)
  • 3 cups (360 g) powdered sugar (sifted)
  • 1 tablespoon granulated coffee + 1 tablespoon hot water (melted)
  • 3 tablespoons caramel sauce (cooled)
  • 1 teaspoon vanilla
  • A pinch of salt

👩‍🍳 Instructions

1️⃣ Caramel Sauce

  1. Melt sugar in a saucepan over medium heat, stirring occasionally.
  2. Once amber, add butter and stir until melted.
  3. Slowly add cream, stirring constantly (it will foam).
  4. Add salt, remove from heat, and let cool.

2️⃣ Cake

  1. Preheat oven to 350°F (175°C). Grease two 8-inch cake pans.
  2. Dissolve coffee in hot water and set aside.
  3. Mix flour, baking powder, and salt.
  4. Cream butter and sugar until fluffy, then add eggs, vanilla, and melted coffee.
  5. Add dry ingredients alternately with milk (flour → milk → flour → milk → flour).
  6. Divide into pans and bake 25–30 minutes.
  7. Cool completely before frosting.

3️⃣ Buttercream

  1. Beat butter until smooth and creamy.
  2. Gradually mix in powdered sugar.
  3. Add melted coffee, caramel sauce, vanilla, and salt.
  4. Beat until soft, light, and spreadable.

4️⃣ Assembling the Cake

  1. Place first cake layer on a plate and spread frosting on top.
  2. Drizzle caramel sauce over it.
  3. Place second cake layer and cover entire cake with buttercream.
  4. Drizzle caramel on top for the classic drip effect ✨
