I am still in love with this easy recipe after all these years! This is one to keep. Not only this is super amazing but this recipe only requires a few simple ingredients to make. The thick potato slices are layered in a baking dish and covered/smothered in cream sauce. You can imagine how seriously fantastic these cheesy scalloped potatoes are!
INGREDIENTS
3 tbsp butter
4 russet potatoes, sliced into 1/4” slices
salt and pepper to taste
3 tbsp all-purpose flour
2 c. whole milk
½ tsp kosher salt
1½ c. shredded Cheddar cheese
salt and pepper to taste
1 onion, sliced into rings
How to make Cheesy Scalloped Potatoes
Step 1: Prepare the oven. Preheat it to 400 degrees F or 200 degrees C.
Step 2: Grease an 8 x 8-inch casserole dish using butter.
Step 3: Into the prepared baking dish, arrange the potatoes, staggering them. Then, add the onion. To taste, season with salt and pepper.
Step 4: Melt the butter in a medium-sized saucepan over medium heat. Once the butter has melted, stir in the flour and salt for about a minute using a whisk. Next, stir in the milk and continue to cook until the mixture has thickened.
Step 5: To the pan, stir in all the cheese. Keep stirring for about 30 to 60 seconds until melted and smooth.
Step 6: Over the potatoes, pour the cheese and tent with aluminium foil. Place in the preheated oven and bake for about 1 1/2 hours or 90 minutes.
Step 7: Set the oven to broil for about 5 minutes for a crisp topping.
Step 8: Remove from the oven when done and serve the cheesy scalloped potatoes right away. Enjoy!
