3 cups zucchini, grated
1 cup mozzarella cheese, grated and divided
1/3 cup Parmesan cheese, grated
1 egg, beaten
1 teaspoon garlic salt
Fresh parsley, finely chopped, for garnish (optional)
Preheat oven to 450°F and line a rimmed baking sheet with parchment paper.
Add zucchini to a colander and let sit for 10-15 minutes. Using a clean kitchen towel or paper towels, squeeze any excess liquid from the zucchini.
To a large bowl, add the drained zucchini, 1/3 cup mozzarella, egg, and garlic salt. Mix until thoroughly combined.
Spread mixture out on prepared baking sheet and smooth into a rectangle about 1/4-inch thick using a rubber spatula.
Bake until edges are golden brown, about 15 minutes.
Top with remaining cheeses, reduce oven temperature to 425°F and bake until bubbly and golden brown, about 10 minutes more.
If using, sprinkle with fresh parsley and serve. Enjoy!
