Honestly, I’m shocked we lasted this long. But, he officially has holes in both knees, for all pairs. There’s no way I’m buying new pants with seven weeks left. No.

It’s hot. It’s cold. It’s hot. It’s windy… ah, spring. I love you. But I also kind of hate you. Don’t you know I have dresser drawers to trade?


I made these sloppy joes the other night when it was cold and windy. It was super easy and quick. And check this out! >> I actually used the recommended green peppers, and you know I hate them. But I kind of liked them. EEP!


Sloppy joes with a touch of Philly Cheese Steak. Quick, easy and delicious!
Serves 6


– 1 teaspoon cornstarch
– 1/2 cup low-sodium beef or chicken broth
– 2 teaspoons olive oil
– 1 small sweet onion, diced
– 1 small green bell pepper, diced
– 1 pound lean ground beef
– 2 tablespoons ketchup
– 2 tablespoons Worcestershire sauce
– 2 teaspoons taco seasoning
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 1 1/2 cups shredded sharp white or monterey jack cheese
– 6 hamburger buns


Preheat grill.
In a small bowl, whisk together cornstarch and broth. Set aside.
Heat oil in large non-stick skillet over medium-high heat. Add onion and peppers; sauté 3 minutes until tender. Add beef and continue to cook, crumbling and browning, for 3 more minutes. Drain off fat.
Stir in ketchup, Worcestershire sauce, taco seasoning, salt and pepper.
Quickly stir broth and cornstarch and add to pan; simmer for about 3 minutes, stirring occasionally, until slightly thickened.
Divide mixture among rolls, top with 1/4 cup cheese and broil until melted (watch closely so nothing burns!).
Serve hot with chips and enjoy!
