1/2 cup butter, softened
1/3 cup sugar
2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 cup milk (non fat or reduced fat)
1/2 tsp vanilla
1 1/2 cups strawberries, hulled and chopped
Preheat the oven to 400°F. Lightly grease a 12 cup muffin tin, or line with muffin papers.
Cream the butter and sugar in a mixing bowl.
Add the egg and mix until well combined.
In a small bowl, sift together the flour, baking powder and salt.
Add half of the flour mixture to the butter and mix.
Add half of the milk and mix well.
Repeat with the flour and milk and mix until well combined.
Add the vanilla and mix well.
Fold in the strawberries.
Evenly divide the batter into the muffin cups.
Bake for 20 – 25 minutes.
To make these gluten free, use 2 cups of a gluten free flour blend and add an additional 1 tsp of baking powder.
